Thick & Creamy Mashed Cauliflower

Thick & Creamy Mashed Cauliflower is a simple low-carb side dish made with boiled cauliflower, butter and garlic salt. The cauliflower is drained very well and blended without any extra liquid to keep it thick, smooth and creamy.

Ingredients

Mashed Cauliflower

  • 1 large head cauliflower, cut into florets
  • 2 tbsp butter
  • 1 tsp garlic salt
  • Black pepper, optional

Equipment

  • Large pot
  • Colander
  • Food processor or immersion blender

Instructions

Prepare the Mashed Cauliflower

  1. Bring a large pot of water to a boil.
  2. Add the cauliflower florets and boil for 10-12 minutes, or until very tender and easily pierced with a fork.
  3. Drain the cauliflower very well in a colander.
  4. Let the cauliflower sit in the colander for 2-3 minutes so excess steam and moisture can escape.
  5. Transfer the cauliflower to a food processor, or place it in a deep bowl if using an immersion blender.
  6. Add the butter and garlic salt. Add black pepper if desired.
  7. Blend until completely smooth and creamy, scraping down the sides as needed if using a food processor.
  8. Serve warm.
