Ingredients

Egg Scramble

  • 6 large eggs
  • 1 poblano pepper, seeded and diced
  • 1/4 cup diced onion
  • 1 tablespoon goat cheese, crumbled
  • 1-2 teaspoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Optional Toppings

  • Extra black pepper
  • Pinch of turmeric
  • Hot sauce

For Serving

  • 1/2 avocado, sliced

Equipment

  • Mixing bowl
  • Whisk
  • Nonstick or well-seasoned skillet
  • Silicone or wooden spatula
  • Knife
  • Cutting board

Instructions

Poblano Goat Cheese Egg Scramble

  1. Whisk the eggs with a pinch of salt and black pepper until just combined. Do not overbeat.
  2. Heat the olive oil in a nonstick or well-seasoned skillet over medium heat.
  3. Add the diced poblano and cook until slightly softened, about 3-4 minutes.
  4. Add the onion and cook for about 1 minute more, until fragrant but still with a little bite.
  5. Pour in the eggs. Stir gently and often, scraping the pan, until the eggs are wet and creamy, not dry. Pull them off the heat while they still look slightly underdone; they will finish cooking from residual heat.
  6. Remove from the heat and fold in or sprinkle over the goat cheese so it softens without fully melting away.
  7. Divide between two plates. Add extra black pepper, a pinch of turmeric, and/or hot sauce if desired. Serve immediately with avocado slices.

Notes

  • Poblano peppers are generally mild. For more heat, leave in a few seeds or add a pinch of cayenne or a few dashes of hot sauce at the end.
  • Goat cheese is naturally salty, so taste the eggs before adding much extra salt.
  • For creamier eggs, remove the skillet from the heat a little earlier than you think; residual heat will finish cooking them.
  • Best eaten right away.
  • Lower-calorie option: use 3 large eggs plus 9 tablespoons Egg Beaters Original (equivalent to 3 large eggs) instead of 6 whole eggs. This version is approximately 269 calories per serving versus approximately 339 calories per serving with 6 whole eggs, saving about 70 calories per serving (about 140 calories for the full recipe).
  • Nutrition is estimated per serving for the standard 6-whole-egg version using 1 1/2 teaspoons olive oil for the full recipe and includes 1/4 avocado per serving. The lower-calorie Egg Beaters option is also an estimate. Actual values will vary with egg size, ingredient brands, and the amount of oil used.
