Scrambled Eggs
- 4 large eggs
- 1 tablespoon unsalted butter
- 1/8 teaspoon fine salt
- Black pepper, to taste
Equipment
- Medium mixing bowl
- Fork or whisk
- 8-inch nonstick skillet
- Silicone or rubber spatula
Instructions
Cook
- Crack the eggs into a bowl. Add the salt and a few grinds of black pepper, then beat with a fork or whisk until the whites and yolks are just combined.
- Melt the butter in an 8-inch nonstick skillet over low heat, swirling to coat the pan.
- Pour in the eggs. Let them sit for about 20 seconds, then gently push and fold the eggs with a silicone spatula, allowing uncooked egg to flow onto the warm pan.
- Continue cooking over low heat, folding occasionally, until the eggs form soft curds and are thickened throughout with no visible liquid egg remaining, about 4-7 minutes.
- For food safety, eggs should reach 160°F. Remove from the heat promptly and serve hot.
