Instructions
Sear the Short Ribs
- Pat the short ribs dry and trim away any large pieces of visible fat.
- Set the Instant Pot to Sauté and add the oil.
- Working in batches if needed, brown the short ribs for 2-3 minutes per side. Transfer the browned ribs to a plate.
Build the Braising Sauce
- Add the onion, carrots, celery and mushrooms to the Instant Pot and sauté for about 3 minutes.
- Add the garlic and ginger and cook for about 30 seconds.
- Pour in a small amount of the beef broth and scrape the bottom of the pot thoroughly to loosen any browned bits.
- Stir in the remaining broth, fish sauce, rice vinegar, tomato paste, black pepper, smoked paprika and optional red pepper flakes.
- If you prefer a slightly sweeter sauce, stir in 1-2 teaspoons Splenda Brown Sugar Blend. This is optional and not necessary.
Slow Braise for 7 Hours
- Return the short ribs and any accumulated juices to the Instant Pot, arranging the ribs in the braising liquid.
- Set the Instant Pot to Slow Cook on the higher setting, often labeled More or High, for 7 hours.
- Use a vented Instant Pot lid or glass slow-cooker lid if available. Do not pressure seal the pot while using the Slow Cook function.
- Cook until the short ribs are very tender and easily pull away from the bone.
Finish the Sauce
- Transfer the short ribs and vegetables to a serving platter.
- Skim excess fat from the surface of the cooking liquid.
- Set the Instant Pot to Sauté and simmer the sauce for 8-12 minutes, or until slightly reduced and rich.
- Taste and adjust seasoning if needed.
- Spoon the dark, reduced sauce over the short ribs and garnish with green onions and optional cilantro.

Notes
- The Splenda Brown Sugar Blend is optional. The onion and carrots provide natural sweetness, so the recipe does not require added sweetener.
- For a lighter finished dish, trim visible fat before cooking and skim rendered fat from the sauce before reducing it.
- Instant Pot Slow Cook settings can vary by model. Use the higher Slow Cook setting, often labeled More or High, for the full 7 hours.
- Do not use the pressure-cooking lid in a sealed pressure position while using the Slow Cook function.
- Nutrition is an estimate per serving based on 4 servings and assumes excess visible fat is trimmed and some rendered fat is removed after cooking.
- Optional Splenda Brown Sugar Blend and suggested side dishes are not included in the nutrition estimate.
