Instructions

Prepare the Salmon

  1. Add the salmon cubes to a mixing bowl with the salt, paprika, garlic, soy sauce, coconut sugar, sriracha, and olive oil.
  2. Toss until the salmon is evenly coated, then let it marinate for about 10 minutes while you prepare the sauce.

Make the Bang Bang Sauce

  1. In a small bowl, whisk together the vegan mayonnaise, sweet chili sauce, and sriracha until smooth. Start with 2 tablespoons sweet chili sauce and add more to taste.

Air Fry

  1. Preheat the air fryer to 400°F (200°C) if your model requires preheating.
  2. Arrange the salmon bites in a single layer in the air fryer basket, leaving a little space between pieces.
  3. Air fry for 8 to 12 minutes, shaking or turning once halfway through, until the salmon is cooked through and lightly crisped on the edges.

Assemble

  1. Divide the salmon between 2 bowls. Add rice if desired, then arrange cucumber and carrots alongside the salmon.
  2. Drizzle generously with the bang bang sauce and finish with chopped green onions and sesame seeds, if using.
