Instructions
Prepare the Salmon
- Add the salmon cubes to a mixing bowl with the salt, paprika, garlic, soy sauce, coconut sugar, sriracha, and olive oil.
- Toss until the salmon is evenly coated, then let it marinate for about 10 minutes while you prepare the sauce.
Make the Bang Bang Sauce
- In a small bowl, whisk together the vegan mayonnaise, sweet chili sauce, and sriracha until smooth. Start with 2 tablespoons sweet chili sauce and add more to taste.
Air Fry

- Arrange the salmon bites in a single layer in the air fryer basket, leaving a little space between pieces.
- Air fry for 8 to 12 minutes, shaking or turning once halfway through, until the salmon is cooked through and lightly crisped on the edges.
Assemble
- Divide the salmon between 2 bowls. Add rice if desired, then arrange cucumber and carrots alongside the salmon.
- Drizzle generously with the bang bang sauce and finish with chopped green onions and sesame seeds, if using.
