Pumpkin Spice Chia Cups

  • 1 cup unsweetened almond milk
  • 1/2 cup pure pumpkin purée
  • 2 to 3 tablespoons unsweetened applesauce
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/8 teaspoon sea salt
  • 1/4 cup chia seeds

Optional Toppings

  • Whipped cream or dairy-free whipped topping, optional
  • Ground cinnamon, optional

Equipment

  • Medium mixing bowl
  • Whisk
  • Measuring cups and spoons
  • Spoon or silicone spatula
  • 2 small jars, cups, or covered containers

Instructions

Mix

  1. Whisk the almond milk, pumpkin purée, applesauce, pumpkin pie spice, and sea salt in a medium bowl until smooth and evenly combined.
  2. Stir in the chia seeds until they are evenly distributed.

Rest and Chill

  1. Let the mixture stand for 5 to 10 minutes, then stir again thoroughly to break up any chia seed clumps.
  2. Divide between 2 small jars, cups, or covered containers, or cover the mixing bowl.
  3. Refrigerate for at least 4 hours, or overnight, until thickened.

Serve

  1. Stir well before serving.
  2. If the chia mixture is thicker than desired, stir in a small splash of unsweetened almond milk until it reaches your preferred consistency.
  3. Top with whipped cream or dairy-free whipped topping and a sprinkle of cinnamon, if desired.

Notes

  • Use 2 tablespoons applesauce for a slightly less sweet, thicker chia cup or 3 tablespoons for a little more natural sweetness.
  • Nutrition is estimated using 2 1/2 tablespoons unsweetened applesauce and does not include optional whipped cream or cinnamon toppings.
  • For the smoothest texture, stir the mixture a second time after the initial 5 to 10 minute rest so the chia seeds do not settle or clump.
  • Store covered in the refrigerator and enjoy within about 4 days.
  • If using whipped cream while keeping the recipe dairy-free, choose a dairy-free whipped topping.
