Sesame Beef Stir-Fry

  • 4 portions brown rice (about 1 cup uncooked)
  • 1 lb lean ground beef
  • 2 tbsp toasted sesame oil
  • 4 cloves garlic, minced
  • 6 green onions, sliced
  • 2 cups broccoli slaw
  • 2 cups bean sprouts
  • 2 tbsp coconut aminos
  • 2 tbsp chili garlic sauce
  • Crushed red pepper flakes, to taste

Equipment

  • Large skillet or wok
  • Medium saucepan with lid
  • Wooden spoon or spatula
  • Measuring cups and spoons

Instructions

Prepare the Rice

  1. Cook the brown rice according to the package directions. Set aside when finished.

Cook the Beef

  1. While the rice cooks, heat a large skillet or wok over medium heat.
  2. Add the lean ground beef and cook, breaking it into crumbles, until browned and no longer pink.
  3. Drain any excess fat, transfer the beef to a plate and set aside.

Stir-Fry

  1. Return the skillet to medium-high heat and add the toasted sesame oil.
  2. Add the garlic and green onions and stir-fry for about 2 minutes, stirring frequently.
  3. Add the broccoli slaw and bean sprouts and stir-fry for about 2 minutes, just until the vegetables begin to soften but remain slightly crisp.
  4. Add the cooked brown rice, coconut aminos and chili garlic sauce. Toss well and stir-fry for about 2 minutes.

Finish

  1. Return the cooked ground beef to the skillet and toss until evenly combined with the rice and vegetables.
  2. Season with crushed red pepper flakes to taste. For less heat, omit the red pepper flakes or reduce the chili garlic sauce.
  3. Cook for about 2 more minutes, or until everything is heated through.
  4. Divide into 4 servings and serve hot.

  • Coconut aminos replace the original light soy sauce.
  • 2 tablespoons chili garlic sauce add a balanced amount of heat without overpowering the sesame, garlic and coconut aminos.
  • Spice level is listed as medium and is adjustable. For less heat, reduce the chili garlic sauce and omit the crushed red pepper flakes; for more heat, add extra red pepper flakes.
  • Nutrition is estimated and will vary based on the leanness of the ground beef, brown rice brand, coconut aminos and chili garlic sauce used.
