Ingredients

Adjust servings 24 servings

Protein Bites

  • 3/4 cup gluten-free oat powder (regular oat powder may also be used)
  • 1/4 cup coconut flour
  • 1/2 cup protein powder, such as Clean Simple Eats Cake Batter or Truvani
  • 1/2 cup pumpkin puree
  • 2/3 cup almond butter
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup pure maple syrup
  • 1/4 cup unsweetened applesauce

Equipment

  • Food processor or high-powered blender
  • Measuring cups and spoons
  • Large plate or small baking sheet
  • Parchment paper

Instructions

Mix

  1. Add the oat powder, coconut flour, protein powder, pumpkin puree, almond butter, pumpkin pie spice, cinnamon, maple syrup, and unsweetened applesauce to a food processor or high-powered blender.
  2. Process until evenly combined and the mixture holds together when pressed. Let the mixture rest for 5 to 10 minutes so the coconut flour and oat powder can absorb moisture.

Shape and Chill

  1. Line a large plate or small baking sheet with parchment paper.
  2. Divide the mixture into 24 portions and roll each portion into a ball.
  3. Refrigerate for at least 30 minutes to firm before serving.

Notes

  • Lower-sugar allulose option: replace the 1/4 cup maple syrup and 1/4 cup applesauce with 1/2 cup plain liquid allulose. Because brands and protein powders absorb moisture differently, let the mixture rest before adjusting the texture.
  • For the simplest allulose option, choose a plain liquid allulose product with allulose as the only ingredient and no erythritol or sugar alcohol blend.
  • Clean Simple Eats Cake Batter whey protein was used as the reference protein powder for the estimated nutrition. Other protein powders, including Truvani or collagen blends, will change the nutrition and may change the texture.
  • Nutrition is estimated for the maple syrup + unsweetened applesauce version and assumes 24 bites. The allulose version will have less sugar and fewer calories.
  • For a gluten-free version, use gluten-free oat powder and verify that the protein powder used is gluten-free. Regular oat powder may be used when gluten-free is not needed.
  • If the mixture feels soft, chill it before adding more dry ingredients. If it is too dry to roll, add pumpkin puree or applesauce 1 tablespoon at a time.
