Chicken Fajitas
- 2 portions chicken breast (about 1/2 lb total), cut into 1/2-inch strips
- 2 tablespoons Italian salad dressing
- 1 teaspoon Gebhardt Menudo Spice
- 1 onion, sliced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 4 (6-inch) gluten-free tortillas
- 1/4 cup salsa
- Cooking spray, as needed
Equipment
- Large resealable bag
- Large skillet
- Plate
- Aluminum foil
- Microwave
- Paper towels
Instructions
Marinate
- Place the sliced chicken and Italian dressing in a large resealable bag. Seal the bag and turn to coat the chicken evenly.
- Refrigerate for at least 30 minutes. For more flavor, the chicken can be marinated longer or overnight.
Cook
- Lightly coat a large skillet with cooking spray and heat over medium-high heat.
- Add the chicken with its marinade and the Gebhardt Menudo Spice. Sauté until the chicken is cooked through and no longer pink in the center, about 7 minutes.
- Transfer the cooked chicken to a plate and cover with foil to keep warm.
- Lightly coat the same skillet with cooking spray. Add the onion and sauté until softened, about 5 minutes.
- Add the diced green and red bell peppers and sauté until tender, about 7 minutes.
- Return the chicken to the skillet and combine with the onion and peppers. Cook until heated through, about 2 minutes.
Assemble
- Warm the tortillas in the microwave between two damp paper towels for about 45 seconds.
- Divide the chicken and vegetable mixture evenly among the four tortillas.
- Top with salsa and serve.
