Egg Scramble
- 6 large eggs
- 1 poblano pepper, seeded and diced
- 1/4 cup diced onion
- 1 tablespoon goat cheese, crumbled
- 1-2 teaspoons olive oil
- Salt, to taste
- Black pepper, to taste

- Pinch of turmeric
- Hot sauce

- 1/2 avocado, sliced

Instructions
Poblano Goat Cheese Egg Scramble
- Whisk the eggs with a pinch of salt and black pepper until just combined. Do not overbeat.
- Heat the olive oil in a nonstick or well-seasoned skillet over medium heat.
- Add the diced poblano and cook until slightly softened, about 3-4 minutes.
- Add the onion and cook for about 1 minute more, until fragrant but still with a little bite.
- Pour in the eggs. Stir gently and often, scraping the pan, until the eggs are wet and creamy, not dry. Pull them off the heat while they still look slightly underdone; they will finish cooking from residual heat.
- Remove from the heat and fold in or sprinkle over the goat cheese so it softens without fully melting away.
- Divide between two plates. Add extra black pepper, a pinch of turmeric, and/or hot sauce if desired. Serve immediately with avocado slices.

Notes
- Poblano peppers are generally mild. For more heat, leave in a few seeds or add a pinch of cayenne or a few dashes of hot sauce at the end.
